Lot 47 comes from a single washing station above the town of Aricha, where ripe cherries are floated, depulped, and fermented under fresh spring water before drying on raised beds for up to fourteen days. The result is impossibly clean: blueberry and honey up front, a jasmine lift in the aroma, and a syrupy body that holds together as the cup cools. We roast it light — city — to keep every bit of that fruit intact.
