Diego Bermúdez's El Paraíso farm runs a double-anaerobic, temperature-controlled fermentation that dials in a Geisha's natural florals to an almost startling degree. Expect bergamot and ripe white peach, a tea-like clarity, and an aftertaste that lingers for minutes. Brew it as pour-over and give it room — it rewards a slightly cooler water and a longer bloom.
