Wet-hulling — giling basah — is what gives Sumatra its signature low-acid, syrupy heft, and the Gayo highlands of Aceh do it as well as anywhere. This bag is dense and savoury: cedar, dark chocolate, and a green-herbal note that reads almost like tobacco leaf. It's the one to reach for on a cold morning or as a base for a bold milk drink. We roast it city-plus to round out the body.
