Brassica accepts a small number of private events each year — typically twenty counter dinners, a dozen half-room buyouts, and three or four full buyouts. The kitchen needs the lead time to build a custom bill that doesn’t pull from the regular service.
A private dinner for 12-14 in the second-seating slot. Custom menu with the kitchen — Sarah builds it around what's strong that week — or run the standard nine-course bill. The other half of the room continues with normal service.
The entire room, both seatings, on a single date. The full nine-course bill or a custom menu of up to twelve courses. Often used for milestone celebrations, corporate group dinners, or product launches.

Date held with a 25% deposit, refundable for 30 days. Bill of fare draft sent within five business days.
- Week 2 — 6Bill iteration
Two rounds of bill-of-fare iteration with Sarah. Wine pairing built by Anya in dialogue with the bill. Final printed program approved at week six.
- T-72 hoursFinal headcount + dietary
Hard headcount, all dietary restrictions, any branded printing or signage delivered to Jordan. The bill is finalised at this point.

Doors open 15 minutes early for private events. The kitchen sends courses on the same cadence as a normal service. We allow up to 30 minutes overtime built in to the timing.
