Grind size, decoded: a cheat sheet for every brewer

Grind size is the biggest flavour lever you own. Water flows through coarse grounds fast and fine grounds slowly, and that contact time decides whether your cup lands sour, sweet, or bitter.
The one rule to remember
Under-extracted coffee tastes sour and thin — grind finer. Over-extracted coffee tastes bitter and drying — grind coarser. Change one click at a time and taste. That single feedback loop will out-teach any chart, including the one below.
The cheat sheet
Cold brew: extra coarse, like raw sugar. French press: coarse, like sea salt. Drip machine: medium, like coarse sand. Pour-over: medium-fine, like table salt. Espresso: fine, like powdered spice with a little grit. If you order your subscription pre-ground, this is exactly the scale we use when we set the mill.
One caveat: darker roasts extract faster than lighter ones, so a dark roast often wants a slightly coarser grind on the same brewer. If you switch between our First Light and Night Shift, expect to nudge the dial.
