Sells out first
Almond croissants are usually gone by 10:30 on weekends. Order ahead to hold one.
Pastries & breakfast
Croissants, morning buns and breakfast sandwiches, baked and built in our Fernwood kitchen from 4:30 every morning.
Ben and the kitchen team start before sunrise. Croissants are laminated the day before, baked fresh each morning, then driven to Cook Street and James Bay by 6:15.
Breakfast runs until 2 p.m. at Fernwood and Cook Street, and until 1 p.m. at James Bay, which has a smaller kitchen. Pastries are baked once a day. We'd rather sell out than serve yesterday's.
Want to be sure you get an almond croissant on a Saturday? Order ahead and we'll set yours aside.
Pastries from $3.75, breakfast from $5.50
How we make it
-
01 Laminated the day before
Butter and dough are folded the afternoon before and rest overnight, so the layers bake up crisp.
-
02 Baked at 4:30
The ovens go on before the lights. The first trays reach the Fernwood case at 6:20.
-
03 Nothing sits overnight
What's left at close goes to a neighbourhood community kitchen the same evening.

Good to know
All questionsDo you have gluten-free food?
The banana loaf and overnight oats are made without gluten ingredients. They're made in a kitchen that uses wheat flour every day, so we can't call them safe for celiac disease.
Do you have vegan options?
Yes: the oat and date bar, avocado toast, overnight oats and the maple oat latte. Any drink can be made with oat, almond or soy milk.
Can I reserve pastries?
Order ahead and we'll hold them for you on the pickup shelf. For more than a dozen, use a catering pastry box so the kitchen can plan the bake.
